  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cloves fresh garlic, minced
  • 2 medium carrots, sliced thinly
  • 2 stalks celery, diced
  • 1 medium onion, chopped
  • 1 cup uncooked long-grain rice
  • 6 cups low-sodium chicken broth
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients by dicing onions, carrots, celery, and mincing garlic.
  2. In a large pot over medium heat, add 2 tbsp olive oil and sauté onions until translucent. Season chicken with salt and pepper; sear in the pot until golden brown on both sides.
  3. Add garlic, carrots, celery, thyme, salt, and pepper to the pot; stir well.
  4. Pour in chicken broth and bring to a boil; then reduce heat and simmer for 20 minutes.
  5. Stir in uncooked rice; cook uncovered for another 15 minutes until rice is tender.
  6. Remove chicken from pot, shred with forks, then return to the soup before serving.
