  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 3 cloves fresh garlic, minced
  • 1 can (15 oz) black beans, drained and rinsed
  • 2 cups cooked Mexican rice
  • 2 cups shredded cheese (cheddar and Monterey Jack blend)
  • 2 tablespoons taco seasoning
  • 1 cup sour cream

Instructions

  1. Preheat oven to 375°F (190°C) and spray a large baking dish with nonstick spray.
  2. In a skillet over medium heat, cook the chicken breasts in olive oil for 6-8 minutes per side until golden brown. Shred the cooked chicken into bite-sized pieces.
  3. In a mixing bowl, combine shredded chicken, black beans, Mexican rice, taco seasoning, and half of the cheese; mix well.
  4. Spread half of the mixture in the baking dish, layer with sour cream, then add remaining mixture on top. Sprinkle with the rest of the cheese.
  5. Cover with foil and bake for 25 minutes; remove foil and bake an additional 10 minutes until cheese is bubbly and golden.
  6. Allow to cool slightly before serving; garnish with cilantro or jalapeños if desired.
