  • 3 cups boneless skinless chicken breasts (cubed)
  • 2 tsp olive oil
  • 4 cloves fresh garlic (minced)
  • 1 cup bell peppers (mixed colors, diced)
  • 1 can (15 oz) black beans (drained and rinsed)
  • 1 cup corn (frozen or canned)
  • 2 tbsp taco seasoning
  • 2 cups shredded cheese (Monterey Jack and cheddar mix)
  • 5 flour tortillas (torn into pieces)

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a 9×13-inch baking dish with nonstick cooking spray.
  2. In a skillet over medium heat, heat olive oil and sauté cubed chicken until golden brown (about 6-8 minutes). Season with salt and pepper.
  3. Stir in minced garlic and bell peppers; sauté until peppers are tender (about 5 minutes).
  4. Add black beans, corn, and taco seasoning; mix well and cook for an additional couple of minutes.
  5. Layer half of the tortilla pieces in the baking dish, followed by half of the chicken mixture and half of the cheese. Repeat layers, finishing with cheese on top.
  6. Cover with foil and bake for about 25 minutes. Remove foil and bake another 10-15 minutes until bubbly and golden.
