  • 1 cup plain yogurt
  • 3 tbsp freshly squeezed lemon juice
  • 2 tsp ground cumin
  • 2 tsp paprika
  • 2 tsp dried oregano
  • 2 medium-sized potatoes, cut into wedges (about 1 lb)
  • 3 tbsp extra virgin olive oil
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp honey

Instructions

  1. 1. Marinate the Chicken: In a bowl, mix yogurt, garlic, lemon juice, spices, soy sauce, and honey. Add chicken, coating well; cover and refrigerate for at least an hour (overnight preferred).
  2. 2. Preheat Oven: Set your oven to 400°F (200°C).
  3. 3. Prepare Potatoes: Wash and cut potatoes into wedges or cubes. Toss with olive oil and season with salt and pepper.
  4. 4. Roast Potatoes: Spread seasoned potatoes on a lined baking sheet and roast for about 20 minutes until golden brown.
  5. 5. Cook Chicken: Remove marinated chicken from the fridge and place on another baking sheet. Roast alongside potatoes for an additional 20-25 minutes or until cooked through.
