  • 3 cloves fresh garlic, minced
  • 1 medium onion, chopped
  • 1 cup bell peppers (red or green), diced
  • 4 cups low-sodium chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup enchilada sauce
  • 1 cup corn (canned or frozen)
  • 1 can (15 oz) black beans, rinsed and drained
  • ¼ cup fresh cilantro, chopped
  • ½ cup sour cream
  • 1 cup shredded cheddar or Monterey Jack cheese

Instructions

  1. Prepare ingredients by chopping onions, bell peppers, and mincing garlic.
  2. In a large pot over medium heat, add olive oil and sauté onions and bell peppers until soft (about 5 minutes). Add garlic towards the end.
  3. Add chicken breasts, chicken broth, diced tomatoes, and enchilada sauce; simmer for about 20 minutes until chicken is cooked through.
  4. Remove chicken from the pot and shred using two forks; return shredded chicken to the pot.
  5. Stir in corn and black beans; allow to simmer for an additional 10 minutes.
  6. Serve hot topped with sour cream, shredded cheese, and cilantro.
