  • 34 boneless, skinless chicken breasts
  • 3 cloves fresh garlic, minced
  • 8 corn or flour tortillas
  • 2 cups shredded cheese (cheddar and Monterey Jack mix)
  • 2 cups enchilada sauce (store-bought or homemade)
  • 1 can (14.5 oz) diced tomatoes
  • 2 tsp chili powder
  • Salt and pepper to taste
  • 2 tbsp olive oil for cooking

Instructions

  1. Preheat oven to 375°F (190°C) and spray a baking dish with nonstick spray.
  2. Season chicken breasts with salt and pepper. In a skillet over medium heat, cook chicken in olive oil for about 6-7 minutes per side until fully cooked.
  3. Shred the chicken once cooled, then combine it in a bowl with half of the cheese, half of the enchilada sauce, diced tomatoes, and chili powder.
  4. Spoon about 2 tablespoons of filling into each tortilla, roll them up tightly, and place seam-side down in the baking dish.
  5. Pour remaining enchilada sauce over tortillas and sprinkle with remaining cheese.
  6. Cover with foil and bake for 20 minutes; then remove foil and bake for an additional 10 minutes until bubbly.
