  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cloves fresh garlic, minced
  • 4 cups low-sodium vegetable broth
  • 1 cup heavy cream
  • 16 oz store-bought gnocchi
  • 2 cups fresh spinach or kale
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Season chicken breasts with salt and pepper. In a large pot over medium heat, add olive oil and sear the chicken until golden brown on both sides (about 5 minutes per side). Remove from pot and set aside.
  2. In the same pot, sauté minced garlic until fragrant (about 1 minute).
  3. Add vegetable broth while scraping up any bits stuck to the bottom of the pot. Bring to a gentle boil before returning the chicken to the pot.
  4. Stir in heavy cream and dried oregano; let simmer for about 10 minutes.
  5. Add gnocchi to the broth and cook according to package instructions (about 3 minutes). Incorporate greens just before serving.
  6. Serve hot with crusty bread on the side.
