  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 4 cups chicken broth
  • 2 cups medium egg noodles
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 1 yellow onion, diced
  • 3 cloves garlic, minced
  • 1 tsp fresh thyme (or ½ tsp dried)
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, add olive oil and sauté the diced onion, garlic, carrots, and celery until softened (about 5 minutes).
  2. Add the chicken breasts and thyme; pour in enough chicken broth to cover the ingredients by an inch. Bring to a gentle boil then reduce heat and simmer for 20 minutes.
  3. Remove the chicken, shred it using two forks, and set aside.
  4. Bring the broth back to a boil and cook egg noodles according to package instructions (approximately 8 minutes).
  5. Return shredded chicken to the pot along with any extra vegetables you desire; stir well to combine.
  6. Serve hot in bowls and garnish with fresh parsley if desired.
