  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain rice
  • 1 can (10.5 oz) cream of mushroom soup
  • 2 cups mixed vegetables (fresh or frozen)
  • 1 cup shredded cheddar cheese
  • 2 tbsp low-sodium soy sauce
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly spray a 9×13-inch baking dish with nonstick cooking spray.
  2. Season the chicken breasts with salt and pepper, then place them in the prepared baking dish.
  3. In a bowl, combine cooked rice, cream of mushroom soup, mixed vegetables, soy sauce, and garlic powder. Mix until well combined.
  4. Pour the mixture evenly over the chicken in the baking dish and sprinkle cheese on top.
  5. Cover with aluminum foil and bake for about 45 minutes. Remove the foil during the last 10 minutes to allow cheese to brown.
  6. Let cool slightly before serving.
