  • 12 oz chicken sausages, sliced
  • 1 medium zucchini, chopped
  • 1 cup cherry tomatoes, halved
  • 8 oz pasta (spaghetti or penne)
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • ¼ cup grated Parmesan cheese

Instructions

  1. Preheat the oven to 400°F (200°C). Prepare a baking dish with nonstick spray.
  2. In a large bowl, combine sliced chicken sausages, chopped zucchini, halved tomatoes, minced garlic, olive oil, Italian seasoning, salt, and pepper. Toss to coat evenly.
  3. Transfer the mixture to the prepared baking dish and spread it out evenly.
  4. Bake for 25-30 minutes until golden brown.
  5. While baking, cook pasta according to package instructions until al dente. Reserve 1 cup of pasta water; drain the rest.
  6. Once baked, combine the sausage mixture with cooked pasta in a large bowl. If needed, add reserved pasta water to achieve desired sauce consistency.
  7. Serve topped with grated Parmesan cheese.
