  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cloves fresh garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 onion, chopped
  • 1 cup pearl barley
  • 8 cups chicken broth
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Prepare the ingredients by washing and chopping the vegetables and mincing the garlic.
  2. In a large pot over medium heat, add a splash of olive oil and sauté onions, garlic, carrots, and celery until soft (about 5 minutes).
  3. Add chicken breasts to the pot and season with salt and pepper; stir well.
  4. Pour in enough chicken broth to cover everything by about an inch; bring to a boil.
  5. Once boiling, add pearl barley and bay leaves; reduce heat to low and simmer uncovered for about 30-40 minutes until chicken is cooked through and barley is tender.
  6. Remove chicken from the pot, shred it using two forks, return it to the soup, stir well, and serve hot.
