  • 1 lb boneless, skinless chicken thighs
  • 1/2 cup fresh parsley, finely chopped
  • 4 garlic cloves, minced
  • 1/4 cup red wine vinegar
  • 1/4 cup extra virgin olive oil
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Juice of 1 lemon

Instructions

  1. In a bowl, mix parsley, garlic, red wine vinegar, olive oil, oregano, lemon juice, salt, and pepper to create the marinade.
  2. Place the chicken thighs in a resealable bag or shallow dish and pour half of the marinade over them. Seal and refrigerate for at least one hour (overnight preferred).
  3. Preheat your grill to medium-high heat (375°F) or oven to 400°F.
  4. Grill chicken for about 6–7 minutes per side until the internal temperature reaches 165°F. If baking, cook for around 25-30 minutes.
  5. Drizzle remaining chimichurri sauce over cooked chicken before serving.
