  • 8 oz dark chocolate (60-70% cocoa), chopped
  • 1/2 cup heavy cream
  • 2 tbsp unsalted butter
  • 1 tsp espresso powder
  • 1/4 cup cocoa powder (for rolling)

Instructions

  1. Melt the dark chocolate in a heatproof bowl over simmering water. In a saucepan, warm the heavy cream until just about to simmer. Pour the hot cream over the melted chocolate and stir until smooth.
  2. Add the unsalted butter and espresso powder; mix until well combined.
  3. Cover and chill the mixture in the fridge for about 2 hours or until firm.
  4. Scoop portions of the ganache using a melon baller or spoon, rolling them into balls.
  5. Roll each truffle in cocoa powder until fully coated and place on parchment paper.
