  • 2 lbs chuck roast
  • 2 tbsp olive oil
  • 1 large onion, diced
  • 4 garlic cloves, minced
  • 2 tsp cumin
  • 2 tsp paprika
  • 2 tsp chili powder
  • 8 corn or flour tortillas
  • 1 cup sour cream
  • 1 cup salsa

Instructions

  1. Prepare your ingredients by dicing the onion and mincing the garlic.
  2. In a large skillet over medium-high heat, add olive oil and sear the chuck roast on all sides until browned.
  3. Remove the roast; sauté onions until soft, then add garlic and spices. Stir for about a minute until fragrant.
  4. Return the chuck roast to the skillet, add broth or water to keep it moist, cover, and slow cook in an oven at 300°F (150°C) for around three hours or until tender.
  5. Shred the cooked roast with two forks.
  6. Warm tortillas and fill them with shredded chuck roast; top with sour cream, salsa, and your choice of additional toppings.
