  • 14 oz firm tofu
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup lime juice (about 2 limes)
  • 1 cup bell peppers (mixed colors), chopped
  • 1/2 cup red onion, thinly sliced
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Press the tofu between two plates with a weight for about 15 minutes to remove excess moisture.
  2. Cut the pressed tofu into cubes and marinate in olive oil, lime juice, garlic powder, salt, and pepper for at least 15 minutes.
  3. While marinating, chop bell peppers and slice red onion.
  4. Heat a non-stick skillet over medium-high heat. Cook the marinated tofu cubes until golden brown on all sides (about 6-8 minutes).
  5. In serving bowls, combine cooked tofu, chopped vegetables, and fresh cilantro. Squeeze extra lime juice on top if desired.
  6. Serve immediately or enjoy later as leftovers.
