Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line two round cake pans with parchment paper.

  3. In another bowl, beat eggs and vegetable oil until frothy. Stir in the grated carrots.

  5. Pour batter evenly into prepared pans and bake for about 25-30 minutes until golden brown and a toothpick comes out clean.
  6. Allow cakes to cool completely before frosting. For the frosting, beat softened cream cheese and powdered sugar until smooth. Frost between layers and on top of cooled cakes.
