  • 1 cup all-purpose flour
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • ½ cup unsalted butter (softened)
  • 2 large eggs
  • ¼ cup unsweetened cocoa powder
  • 1 cup crushed chocolate sandwich cookies
  • 1 tsp vanilla extract
  • ½ tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In another bowl, whisk together the flour, cocoa powder, and salt. Gradually mix this dry mixture into the wet ingredients until just combined.
  5. Gently fold in the crushed chocolate sandwich cookies and active sourdough starter until evenly distributed.
  6. Scoop tablespoons of dough onto the prepared baking sheets, spacing them about two inches apart. Bake for 12-15 minutes or until edges are set but centers are slightly underbaked.
  7. Allow cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.
