  • 4 large bell peppers
  • 1 cup quick-cooking couscous
  • 8 oz fresh mozzarella, cubed
  • 1 cup cherry tomatoes, halved
  • 1 medium zucchini, diced
  • ¼ cup fresh basil, chopped
  • 2 tbsp olive oil
  • Salt & pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a baking dish with nonstick spray or olive oil.
  2. Cut the tops off the bell peppers, remove seeds and membranes, then place them upright in the baking dish.
  3. In a saucepan, bring 1½ cups of water to a boil. Stir in couscous and a pinch of salt. Remove from heat, cover, and let sit for about 5 minutes before fluffing with a fork.
  4. In a skillet over medium heat, add olive oil and sauté diced zucchini and halved cherry tomatoes for about 4 minutes. Season with salt and pepper.
  5. In a large bowl, combine cooked couscous, sautéed veggies, chopped basil, and cubed mozzarella; mix gently.
  6. Stuff each bell pepper generously with the mixture and bake for 25-30 minutes until tender.
