  • 2 medium sweet potatoes (about 1 lb)
  • 1 cup fresh cranberries
  • 1 medium Granny Smith apple, chopped
  • 2 tbsp brown sugar
  • 1 tsp cinnamon
  • 2 tbsp unsalted butter
  • Pinch of salt

Instructions

  1. Preheat your oven to 400°F (200°C). Scrub the sweet potatoes clean.
  2. Place sweet potatoes on a baking sheet and bake for 45-60 minutes until tender.
  3. While baking, chop cranberries and apple; mix with brown sugar, cinnamon, and salt in a bowl.
  4. Once sweet potatoes are cool enough to handle, slice them open lengthwise and scoop out most of the flesh into a bowl.
  5. Mash the sweet potato flesh with butter, then fold in the cranberry-apple mixture.
  6. Spoon the filling back into potato skins, place on the baking sheet, and bake for an additional 15 minutes until heated through.
