  • 3 boneless, skinless chicken breasts (about 1.5 pounds)
  • 1 cup dried cranberries
  • 1 cup pecan halves (toasted)
  • 2 celery stalks (chopped)
  • 1/2 cup mayonnaise
  • 2 tablespoons honey

Instructions

  1. Preheat oven to 400°F (200°C). Bake seasoned chicken breasts in a sprayed baking dish for 20-25 minutes until cooked through. Allow to cool before shredding.
  2. While the chicken cools, chop celery and toast pecans in a dry skillet over medium heat for about 3 minutes.
  3. In a large bowl, mix mayonnaise and honey until smooth.
  4. Add shredded chicken, cranberries, celery, and toasted pecans to the bowl. Toss gently to combine.
  5. Cover and chill in the fridge for at least an hour to meld flavors.
  6. Serve on its own or over greens.
