  • 1 lb lean ground beef
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 tbsp taco seasoning
  • 1 cup bell peppers, diced (mixed colors)
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 2 cups chicken broth
  • 8 oz cream cheese
  • 1 cup shredded cheese (cheddar and Monterey Jack blend)

Instructions

  1. In a large pot over medium heat, brown the ground beef until fully cooked. Drain excess fat and set aside.
  2. In the same pot, sauté the chopped onion and minced garlic until translucent, about 3 minutes.
  3. Add diced bell peppers and cook for another 5 minutes until soft.
  4. Stir in taco seasoning and cook for 2 minutes.
  5. Pour in the fire-roasted diced tomatoes and chicken broth; mix well.
  6. Lower the heat and add cream cheese along with shredded cheese. Stir continuously until melted and creamy.
