  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 1 red bell pepper, diced
  • 3 cloves fresh garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 (14.5 oz) can fire-roasted diced tomatoes
  • 1 cup heavy cream
  • ½ cup fresh cilantro, chopped
  • Salt and pepper to taste

Instructions

  1. Season chicken breasts with salt and pepper. Heat olive oil in a large pot over medium heat and sear the chicken until golden brown on both sides (about 5 minutes per side). Remove and set aside.
  2. In the same pot, sauté diced onion and red bell pepper until soft (about 5 minutes).
  3. Add minced garlic and spices (cumin and chili powder recommended); cook for about 1 minute.
  4. Return the chicken to the pot along with diced tomatoes and chicken broth. Bring to a simmer, cover, and cook for 20 minutes.
  5. Remove chicken again; shred it using two forks. Return shredded chicken to the pot.
  6. Stir in heavy cream and let simmer for an additional 5 minutes before serving.
