  • 2 stalks celery (finely chopped)
  • 1 medium onion (chopped)
  • 3 cloves garlic (minced)
  • 6 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 tsp dried thyme
  • Salt and pepper (to taste)

Instructions

  1. Prepare your ingredients by dicing the carrots, celery, and onion. Cut the chicken into bite-sized pieces.
  2. In a large pot over medium heat, add olive oil and sauté onions, carrots, and celery until softened (about 5 minutes).
  3. Add the chicken to the pot and season with salt and pepper. Cook until browned on all sides (about 5 minutes).
