Ingredients

Scale
  • 4 cups sliced cucumbers (about 2 large cucumbers)
  • 1 cup Greek yogurt (full-fat)
  • 2 tablespoons fresh dill (chopped) or 1 tablespoon dried dill
  • 2 tablespoons lemon juice (freshly squeezed)
  • 1 teaspoon garlic powder
  • ½ teaspoon salt (to taste)
  • ¼ teaspoon black pepper (to taste)

Instructions

  1. Wash and thinly slice the cucumbers (about a quarter-inch thick). A mandoline slicer can help ensure even pieces.
  2. Place cucumber slices in a colander, sprinkle with salt, and let sit for 15 minutes to release excess moisture.
  3. In a bowl, mix Greek yogurt, lemon juice, dill, garlic powder, salt, and pepper until smooth.
  4. Rinse the salted cucumbers under cold water and pat dry with paper towels.
  5. Toss the cucumbers in the yogurt dressing until evenly coated.
  6. Cover and refrigerate for at least one hour to allow flavors to meld before serving.
