  • 1/3 cup grated Parmesan cheese
  • 1 large egg
  • 1/4 cup chopped fresh basil (or 2 tsp dried)
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 can (14.5 oz) diced tomatoes
  • 1 medium zucchini, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). In a bowl, combine ground beef, breadcrumbs, Parmesan cheese, egg, basil, salt, and pepper. Mix until well combined and form meatballs about an inch in diameter.
  2. Place meatballs on a baking sheet and bake for 15 minutes until browned.
  3. In a large pot over medium heat, add olive oil and brown the meatballs for about 5 minutes. Remove them from the pot.
  4. Add diced tomatoes and chicken broth to the pot; bring to a simmer while scraping up brown bits.
  5. Stir in chopped zucchini and let simmer for another 10 minutes until vegetables are tender.
  6. Add heavy cream, stirring until combined. Simmer for an additional 5 minutes before serving.
