  • 4 medium russet potatoes, peeled and diced (about 800g)
  • 6 slices bacon
  • 1 medium onion, chopped (about 150g)
  • 2 cloves garlic, minced
  • 4 cups low-sodium chicken broth (960ml)
  • 1 cup heavy cream (240ml)
  • 1 cup shredded cheddar cheese (100g)
  • Salt & pepper to taste

Instructions

  1. In a large pot over medium heat, cook bacon until crispy. Remove from pot and drain on paper towels, reserving drippings.
  2. Sauté chopped onion in reserved bacon drippings until translucent, about 5 minutes. Add minced garlic and cook for another minute.
  3. Add diced potatoes and chicken broth to the pot. Bring to a boil then reduce heat and simmer until potatoes are tender (15-20 minutes).
  4. Blend soup until smooth using an immersion blender or by transferring to a standard blender.
  5. Return blended soup to low heat; stir in heavy cream and shredded cheddar cheese until melted. Season with salt and pepper.
  6. Serve garnished with crispy bacon bits and green onions.
