  • 1 cup shredded sharp cheddar cheese
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients by peeling and dicing the potatoes, chopping the onion, and mincing the garlic.
  2. In a large pot over medium heat, melt the butter. Add onions and sauté until translucent (about 5 minutes). Stir in minced garlic and cook for another minute.
  3. Add diced potatoes and chicken broth to the pot. Bring to a boil then reduce heat to simmer for 15-20 minutes until potatoes are fork-tender.
  4. Blend the soup using an immersion blender until smooth (or transfer to a regular blender). If you prefer some texture, leave a few chunks intact.
  5. Return the blended soup to low heat, stir in heavy cream, and season with salt and pepper.
  6. Serve hot with crispy bacon bits and shredded cheese on top.
