  • 9 lasagna noodles (traditional or no-boil)
  • 3 cups fresh baby spinach
  • 2 cups cremini or button mushrooms, chopped
  • 1 cup ricotta cheese
  • 1.5 cups shredded mozzarella cheese
  • 0.5 cup freshly grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Sauté minced garlic for about one minute until fragrant. Add chopped mushrooms and spinach; cook until softened. Season with Italian seasoning.
  3. In a bowl, combine ricotta cheese with half the mozzarella and Parmesan cheeses, heavy cream, salt, and pepper until smooth.
  4. In a baking dish, layer sauce at the bottom followed by noodles, half of the veggie mixture, then half of the cheese mixture. Repeat layers and finish with noodles topped with remaining mozzarella and Parmesan.
  5. Cover with foil and bake for 25 minutes. Remove foil and bake for another 10-15 minutes until bubbly and golden brown.
  6. Allow to cool slightly before slicing. Serve hot.
