  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 3 cloves fresh garlic, minced
  • 1 cup sour cream
  • 1 cup heavy cream
  • 1/2 cup sun-dried tomatoes, chopped (jarred in oil preferred)
  • 2 cups fresh spinach
  • 12 oz fettuccine or penne pasta
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Season chicken breasts with salt and pepper. In a large skillet over medium heat, add olive oil. Cook chicken for 6-7 minutes per side until golden brown and cooked through. Remove and let rest before slicing.
  2. In the same skillet, reduce heat to low and sauté minced garlic for about 1 minute until fragrant.
  3. Stir in heavy cream and sour cream, mixing until smooth. Add sun-dried tomatoes and spinach, simmering until spinach wilts.
  4. Cook pasta according to package instructions until al dente. Drain and reserve some pasta water.
  5. Combine cooked pasta with the sauce in the skillet. Mix well; add reserved pasta water if needed for creaminess. Gently fold in sliced chicken.
  6. Serve hot, drizzled with olive oil or sprinkled with Parmesan cheese if desired.
