Ingredients

Scale
  • 1 pound white fish fillets (cod or tilapia)
  • 1 cup panko breadcrumbs
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 8 corn tortillas
  • 2 ripe avocados
  • 1/2 cup sour cream
  • Juice of 2 limes
  • 2 teaspoons chili powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Rinse fish fillets and pat dry. Season with salt, pepper, and chili powder.
  2. Set up a breading station: one plate with flour, one bowl with beaten eggs, and another plate with panko breadcrumbs. Coat each fillet in flour, dip in egg wash, then press into panko.
  3. Place breaded fillets on a lined baking sheet; spray lightly with oil. Bake for 12-15 minutes until golden brown, flipping halfway through.
  4. While fish bakes, blend avocados, sour cream, lime juice, garlic powder, chili powder, salt, and pepper until smooth.
  5. Warm tortillas in the oven or on a skillet.
  6. Assemble tacos by placing crispy fish on each tortilla and topping with avocado crema and additional toppings as desired.
