  • 4 (6 oz) firm white fish fillets (cod, haddock, or tilapia)
  • 1 cup panko breadcrumbs
  • 2 tbsp fresh lemon juice
  • 2 tbsp chopped fresh parsley
  • 1 tbsp chopped fresh dill
  • 1 tsp garlic powder
  • 3 tbsp olive oil
  • Zest of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Pat the fish fillets dry, season with salt and pepper.
  3. In one bowl, combine panko breadcrumbs, garlic powder, parsley, dill, salt, and pepper. In another bowl, whisk olive oil and lemon juice.
  4. Dip each fillet in the lemon mixture then coat with panko. Place on the prepared baking sheet.
