  • 4 boneless, skinless chicken breasts
  • 1 cup panko breadcrumbs
  • 1/2 cup all-purpose flour
  • 1 large egg
  • 2 cloves fresh garlic, minced
  • 1 head romaine lettuce, chopped
  • 1/2 cup grated Parmesan cheese
  • 4 tbsp Caesar dressing
  • 4 slices ciabatta or sourdough bread
  • Juice of 1 lemon

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Season chicken breasts with salt and pepper. Pound to an even thickness.
  3. Set up three bowls: one with flour, one with beaten egg, and one with panko mixed with garlic. Dredge chicken in flour, dip in egg, then coat in panko.
  4. Place chicken on the prepared sheet and spray lightly with cooking spray. Bake for 20-25 minutes until golden brown (internal temperature: 165°F).
  5. While baking, slice bread and spread Caesar dressing on each side. Layer lettuce and sprinkle Parmesan.
  6. Once chicken is done, slice into strips and place on dressed bread. Top with remaining slice and serve.
