  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cloves fresh garlic, minced
  • 2 medium carrots, sliced
  • 2 celery stalks, diced
  • 1 cup dumpling mix (store-bought or homemade)
  • 4 cups low-sodium chicken broth
  • 1/2 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Chop the carrots, celery, and mince the garlic.
  2. Season chicken breasts with salt and pepper; place them in the bottom of the crockpot.
  3. Add chopped vegetables over the chicken and pour in enough chicken broth to cover.
  4. Set the crockpot to low for 6-8 hours.
  5. About 30 minutes before serving, prepare dumpling mix according to package instructions and drop spoonfuls onto the mixture in the crockpot.
  6. Stir in heavy cream once dumplings are cooked through (about another 30 minutes).
  7. Serve hot with crusty bread.
