  • 1 lb ground beef
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 2 cans (14.5 oz each) diced tomatoes
  • 4 cups beef broth
  • 8 oz lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • Salt and pepper to taste

Instructions

  1. Brown the ground beef in a skillet over medium heat until no longer pink; drain excess grease and transfer to the Crockpot.
  2. Sauté onion and garlic in the same skillet until fragrant (about 3 minutes); add to the Crockpot.
  3. Stir in diced tomatoes (with juices), beef broth, salt, and pepper.
  4. Break lasagna noodles into bite-sized pieces and add to the pot; stir well.
  5. Cover and cook on low for 4 hours or high for 2 hours.
  6. Before serving, stir in ricotta cheese and top with shredded mozzarella.
