  • 1 cup frozen peas
  • 1 cup diced carrots
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 tablespoons butter
  • 1/3 cup all-purpose flour
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 2 store-bought pie crusts (or homemade)

Instructions

  1. Preheat oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
  2. In a large skillet, melt 2 tablespoons of butter over medium heat. Sauté onions and garlic until fragrant. Add carrots and peas, cooking until tender.
  3. Stir in shredded chicken and mix well.
  4. In another pan, melt remaining butter; whisk in flour until smooth. Gradually add chicken broth and heavy cream, stirring until bubbly and thickened.
  5. Combine chicken mixture with sauce in the skillet; stir well.
  6. Roll out one pie crust into the baking dish, fill with the chicken mixture, then cover with the second crust. Seal edges and cut slits in the top crust for ventilation.
  7. Bake for about 30 minutes or until golden brown.
