  • 2 lbs Russet potatoes, peeled and cubed
  • 4 tbsp unsalted butter
  • 1/2 cup heavy cream
  • 3 large egg yolks
  • 1 tsp salt (or to taste)
  • 1/2 tsp black pepper (or to taste)
  • 1/4 tsp nutmeg

Instructions

  1. Boil the peeled and cubed Russet potatoes in salted water until tender (15-20 minutes). Drain well.
  2. Mash the cooked potatoes in the pot until smooth, then mix in the butter and heavy cream until creamy.
  3. Stir in the egg yolks, salt, pepper, and nutmeg until well combined.
  4. Preheat the oven to 400°F (200°C) and pipe the mixture into rosettes on a parchment-lined baking sheet.
  5. Bake for 20-25 minutes or until golden brown on top.
