  • 1 cup graham cracker crumbs
  • 4 tbsp unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 2 medium Granny Smith or Honeycrisp apples, peeled and diced
  • 1 tsp ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, combine graham cracker crumbs and melted butter until well mixed. Press about two tablespoons into each muffin liner.
  3. In another bowl, beat cream cheese and sugar until smooth. Mix in the vanilla extract. Spoon this mixture over the crusts in the muffin tin.
  4. Sauté diced apples with cinnamon in a skillet over medium heat for about five minutes until softened but not mushy.
  5. Top each mini cheesecake with sautéed apples and sprinkle with extra graham cracker crumbs if desired.
  6. Bake for 20-25 minutes until set. Allow to cool completely before serving.
