  • 4 boneless, skinless chicken breasts
  • 3 cloves fresh garlic, minced
  • 2 medium zucchinis, sliced
  • 3 tbsp freshly squeezed lemon juice
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp honey
  • 2 tbsp extra virgin olive oil

Instructions

  1. Preheat your grill or oven to 400°F (200°C).
  2. In a bowl, whisk together soy sauce, honey, minced garlic, and lemon juice to create the marinade.
  3. Place chicken breasts in a large zip-lock bag or shallow dish and pour the marinade over them. Marinate for at least 30 minutes.

  5. While the chicken cooks, heat olive oil in a skillet over medium heat. Sauté sliced zucchini for about 5-7 minutes until tender yet crisp; season lightly with salt and pepper.
  6. Serve sliced chicken atop sautéed zucchini and drizzle with any remaining marinade.
