  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 cup shredded carrots (about 2 medium carrots)
  • 1/2 cup unsalted butter (melted)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • Pinch of salt
  • Optional: 1/2 cup chopped nuts (walnuts or pecans)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, mix rolled oats, flour, baking soda, cinnamon, nutmeg, and salt until combined.
  3. In another bowl, cream together melted butter, brown sugar, granulated sugar, and vanilla extract. Add eggs one at a time and mix well.
  4. Combine the wet and dry ingredients until fully incorporated. Fold in shredded carrots and nuts if using.
  5. Drop tablespoon-sized scoops of dough onto prepared baking sheets. Bake for 12-15 minutes until golden brown.
  6. Allow cookies to cool on the baking sheet for five minutes before transferring to wire racks.
