  • 4 English muffins, torn into bite-sized pieces
  • 8 large eggs
  • 2 cups whole milk
  • 2 cups shredded ham (or bacon/smoked salmon)
  • 1 cup shredded sharp cheddar cheese
  • ½ cup unsalted butter (for hollandaise)
  • 3 egg yolks (for hollandaise)
  • 2 tbsp freshly squeezed lemon juice (for hollandaise)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a bowl, whisk together eggs, milk, salt, and pepper. Fold in shredded ham and half of the cheddar cheese.
  3. Add torn English muffins to the egg mixture, ensuring all pieces are coated.
  4. Pour mixture into the prepared baking dish and bake for 30-35 minutes until golden brown.
  5. For hollandaise: Melt butter over low heat. Whisk egg yolks with lemon juice until thickened, then gradually add melted butter while whisking continuously until smooth.
  6. Serve casserole warm with hollandaise drizzled on top.
