  • 3/4 cup unsalted butter, room temperature
  • 1 cup brown sugar, packed
  • 1/2 cup molasses
  • 1 large egg yolk

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, ginger, cinnamon, baking soda, and salt.
  3. In a large bowl, beat butter, brown sugar, and molasses until creamy. Add the egg yolk and mix well.
  4. Gradually add dry ingredients to the wet mixture until just combined.
  5. Using a tablespoon or cookie scoop, place rounded balls of dough on prepared sheets about two inches apart.
  6. Bake for 10–12 minutes until edges are firm but centers remain soft. Cool on sheets for a few minutes before transferring to wire racks.
