  • 1/2 cup sago pearls
  • 2 ripe mangoes (about 2 cups when blended)
  • 1 cup full-fat coconut milk
  • 2 tbsp granulated sugar (adjust to taste)
  • 4 cups water (for boiling sago)

Instructions

  1. Soak the sago pearls in water for 30 minutes, then drain.
  2. In a pot, boil 4 cups of water and add soaked sago pearls. Cook for about 15 minutes until translucent, stirring occasionally.
  3. Drain and rinse cooked sago under cold water to remove excess starch.
  4. In a saucepan over medium heat, combine coconut milk and sugar, stirring until heated (do not boil).
  5. Peel and chop mangoes; blend until smooth.
  6. In a bowl, mix together cooked sago, coconut milk mixture, and blended mango until combined.
  7. Chill in the refrigerator for at least one hour before serving.
