  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 medium zucchinis, sliced into half-moons
  • 1 cup cherry tomatoes, halved
  • 1 medium red onion, cut into wedges
  • 4 garlic cloves, minced
  • 3 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • 2 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Spray a large baking dish with nonstick cooking spray.
  2. Prepare the vegetables: slice zucchini, halve cherry tomatoes, chop red onion, and mince garlic.
  3. In a bowl, mix olive oil, lemon juice, oregano, salt, and pepper. Coat chicken breasts in the mixture.
  4. Layer zucchini and cherry tomatoes at the bottom of the baking dish. Place seasoned chicken on top and scatter onion wedges around.
  5. Cover with aluminum foil and bake for about 25 minutes. Remove foil and bake for an additional 10–15 minutes until cooked through and golden.
  6. Serve hot, drizzling any leftover pan juices over each serving.
