  • 12 jumbo pasta shells
  • 1 cup ricotta cheese
  • 2 cups fresh baby spinach, chopped
  • 1 cup shredded mozzarella cheese, divided
  • 2 cups marinara sauce
  • ¼ cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • Salt to taste

Instructions

  1. Preheat your oven to 375°F (190°C). Boil water in a large pot and cook the jumbo pasta shells according to package instructions until al dente.
  2. In a mixing bowl, combine ricotta cheese, chopped spinach, garlic powder, Italian seasoning, half of the mozzarella, and salt. Mix well.
  3. Once the shells are cool enough to handle, stuff each shell generously with the ricotta-spinach mixture.
  4. Spread some marinara sauce on the bottom of a greased baking dish. Place stuffed shells seam-side up over the sauce.
  5. Cover the shells with remaining marinara sauce and sprinkle with leftover mozzarella and Parmesan cheese.
  6. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 10 minutes until golden brown.
