Easy Spinach and Ricotta Stuffed Shells are a delightful comfort food that combines tender jumbo pasta shells with a creamy filling of ricotta cheese, fresh spinach, and Parmesan.   • 12 jumbo pasta shells
  • 1 cup ricotta cheese
  • 1 cup fresh spinach, chopped
  • ½ cup grated Parmesan cheese
  • 2 cups marinara sauce
  • 1 clove garlic, minced
  • 1 large egg
  • Salt and pepper to taste
  • Olive oil (for sautéing)

Instructions

  1. Preheat oven to 375°F (190°C). Boil salted water in a large pot and cook the pasta shells until al dente (8-10 minutes). Drain gently.
  2. In a skillet, heat olive oil over medium heat. Sauté minced garlic for 1 minute, then add spinach until wilted (about 2 minutes). Remove from heat.
  3. In a mixing bowl, combine ricotta, Parmesan, sautéed spinach, egg, salt, and pepper. Mix until well blended.
  4. Stuff each shell with the filling using a spoon.
  5. Spread half of the marinara sauce in a baking dish. Arrange stuffed shells on top and cover with remaining sauce.
  6. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 5 minutes until bubbly.
