  • 4 medium zucchinis, sliced
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 cups shredded sharp cheddar cheese
  • 1 cup seasoned breadcrumbs
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C) and prepare a baking dish with nonstick spray.
  2. In a large bowl, combine sliced zucchinis, diced onion, minced garlic, salt, and pepper.
  3. In another bowl, mix half of the cheddar cheese with breadcrumbs and Italian seasoning.
  4. Layer half of the zucchini mixture in the baking dish, followed by half of the remaining cheese. Repeat layers.
