  • 4 medium zucchinis
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup corn (fresh or frozen)
  • 2 cups shredded Mexican blend cheese
  • 1 cup enchilada sauce (store-bought or homemade)
  • Optional toppings: sour cream and fresh avocado slices

Instructions

  1. Preheat oven to 375°F (190°C). Grease a baking dish.
  2. Slice zucchinis lengthwise and scoop out some flesh, leaving enough to hold the filling.
  3. In a bowl, mix black beans, corn, 1 cup cheese, and half of the enchilada sauce.
  4. Fill each zucchini half with the mixture. Place in the baking dish and drizzle remaining sauce on top. Sprinkle with leftover cheese.
  5. Cover with foil and bake for 25–30 minutes. Uncover for an additional 5 minutes until cheese is bubbly.
