  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 tsp ground nutmeg
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 2 large eggs
  • 1/4 cup apple cider
  • For the Filling: 2 cups powdered sugar
  • 8 oz cream cheese, softened
  • 2 tbsp apple cider

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, cream together butter, granulated sugar, and brown sugar until fluffy.
  4. Add eggs one at a time to the butter mixture; then mix in apple cider.
  5. Gradually combine dry ingredients with wet ingredients until smooth.
  6. Drop tablespoons of dough onto prepared baking sheets and bake for about 10 minutes until set around edges but still soft in the center.
  7. For the filling, beat together cream cheese and powdered sugar; add apple cider until smooth.
  8. Once cookies cool completely, sandwich filling between two cookies.
