Ingredients

Scale
  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • ½ cup granulated sugar
  • ½ cup brown sugar, packed
  • ½ cup unsalted butter, softened
  • 2 large eggs (room temperature)
  • ½ cup whole milk
  • 2 cups tart apples (e.g., Granny Smith), peeled and diced
  • 1 cup old-fashioned oats
  • ½ cup chopped nuts (optional)

Instructions

  1. 1. Preheat your oven to 350°F (175°C) and line a cupcake tin with paper liners.
  2. 2. In a large bowl, whisk together flour, baking powder, cinnamon, granulated sugar, and brown sugar until well combined.
  3. 3. In another bowl, cream softened butter and sugars until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in milk until smooth.
  4. 4. Gradually fold the dry ingredients into the wet mixture until just combined. Gently stir in diced apples.
  5. 5. For the crumble topping, mix oats, flour, brown sugar, melted butter, and optional nuts until crumbly.
  6. 6. Fill cupcake liners about two-thirds full with batter and top generously with crumble mixture. Bake for 20-25 minutes or until a toothpick comes out clean.
