  • 1 cup graham cracker crumbs
  • 1/4 cup unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1/2 cup sugar
  • 2 large eggs
  • 1 large Granny Smith apple, diced
  • 1 tsp ground cinnamon
  • Whipped cream (for serving)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a mini muffin pan.
  2. In a bowl, mix graham cracker crumbs, melted butter, and sugar until crumbly. Press into the bottom of each muffin cup.
  3. In another bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well.
  4. Fold in diced apples and cinnamon into the cream cheese mixture.
  5. Spoon filling into crusts until three-quarters full and bake for 18-20 minutes until set.
  6. Allow to cool slightly before serving warm or chilled with whipped cream.
